This recipe was born from one of those moments. I wanted something rich, creamy, chewy, gooey, sweet, and crunchy... and I wanted it fast. What came through was pure magic—a dessert that tastes like a dreamy caramel candy bar but is packed with nourishing whole foods your body will actually thank you for.

✨ Raw Caramel Dessert
Ingredients:
- 1 ripe banana
- A handful of soft, juicy dates
- 1/3 cup tahini
- 1/4 cup maple syrup
- A splash of vanilla
- A pinch of sea salt
- 2 tablespoons water (or more, to get that drizzly caramel texture)
- Dehydrated buckwheat (recipe in my book), crunched-up rice cake, or anything crispy for crunch
How to Make It:
- Start with the base: Mash your banana onto a sheet of parchment paper and spread it out evenly.
- Add your sweetness: Flatten or dice the dates and place them over the banana layer.
- Make your caramel magic: In a separate bowl, stir together the tahini, maple syrup, vanilla, salt, and water until smooth and spreadable.
- Layer it up: Spread a generous layer of caramel sauce over the banana and dates.
- Bring the crunch: Place a layer of your dehydrated buckwheat or crumbled rice cake on top.
- More caramel, please: Add another layer of that divine caramel sauce over the crunchy bits.
- Freeze for 30 minutes (or longer if you want it firmer).
Tip:
I like mine just set—firm enough to hold together but still soft, chewy, and lusciously gooey. It’s that melt-in-your-mouth texture that makes every bite feel indulgent... without an ounce of guilt.
